Harissa Breakfast Tacos

Breakfast is my favorite meal of the day. If you ask me what to put Wet Wizard on there is a 95% chance I'll tell you a breakfast sandwich, however, breakfast tacos are an equally good vehicle for consuming your favorite Wet Wizard sauce. In the recipe below I used Harissa, but any of the three would be stellar. 

Yield: 4 Tacos

Ingredients

  • 4 Tortillas - the 50/50 corn and flour blend are a favorite of mine
  • 4 eggs, beaten
  • 1/2 bunch kale
  • 1/2 head of cauliflower
  • 1 small yellow onion
  • olive oil
  • salt & pepper 

Heat your oven to 450 degrees. Dice the onion and break the cauliflower into small florets. Toss both with olive oil, salt and pepper. Roast in the oven for 30 minutes until starting to brown. 

Wash and dry your kale. Toss with olive oil and salt. When the cauliflower is done reduce the oven temperature to 250 degrees and bake the kale for 20 minutes or until starting to get crispy. 

Scramble your eggs - then sprinkle with salt and let stand for 5 minutes before adding pepper and cooking. (The Food Lab says that this is the trick to getting fluffy eggs!) 

Heat tortillas in dry skillet. Assemble tacos with eggs and cauliflower mixture. Top with crispy kale and your favorite Wet Wizard sauce!
